- Abstract
- Abstract : The total antioxidant power and ascorbic acid content of aqueous extracts of various fruits were measured simultaneously using an automated method (FRASC). Results showed that of the fruit extracts tested, the highest antioxidant power, expressed as μmol ferric reducing/antimxidant power (FRAP) per 100 g uncooked wet weight, was found in china guava (786) while the lowest was in dragon fruit (74). The ascorbic acid level, expressed as μmol per 100 g wet weight, was also highest in china guava (235) but was low or undetectable in honey dew melon, avocado, dragon fruit and mangosteen.
